Hazelnut Mocha Breakfast Cereal

So my first week of hardcore Keto dieting is over! I ate less than 20 carbs a day and went to the gym four times during the week for an hour a pop. Here are the stats of my weight-loss so far:

Week 1 Complete!

Week 1 Complete!

Current Weight: 241 (Loss of 5 pounds!)

  • Arms- 15″ (loss of 1″)
  • Waist-39″ (loss of 1″)
  • Hips-48″
  • Thighs-28″ (loss of 1″)
  • Calves-17.5″ (loss of 1/2″)

So that is a grand total of 5 pounds lost and 3.5 inches lost in one week! Not too shabby!

Now let’s get on to this weeks recipe!

Mocha Hazelnut Cereal--Low carb and keto friendly! No sugar at all!

I’m pretty sure I have not eaten cereal in YEARS. I honestly can’t remember the last time I had it or what kind it was. I mean, I have fond childhood memories of Cookie Crisp, Boo Berry and Fruity Pebbles…but as an adult I steered clear of these little sugar-laced nuggets. When you think about it, it’s basically eating a bowl of candy first thing in the morning!

Even when you get into “healthier” ones like granola they are still packed with sugar from honey. Sugar is sugar, classing it up with coconut sugar, agave or organic honey doesn’t dismiss the fact it’s still SUGAR.

I actually got the idea for this cereal from all the flax seed cracker recipes out on the interwebs. I thought to myself, why not make a sweet version!

Made with strongly brewed coffee, unsweetened cocoa and hazelnut meal….so kinda like a Hazelnut Mocha Latte!

I added 3 packets of Stevia in the Raw to the batter because I prefer my coffee a little on the bitter side. So I would recommend tasting the batter and adding more if you want it sweeter.

I also ended up throwing a few frozen raspberries in my bowl and the sweetness was perfect!

The lowest carb “milk” I’ve found is unsweetened Almond Milk. The total batch of cereal had about 10 net carbs….so with about 4 servings you are looking at roughly 3 net carbs a bowl!

Dry ingredients go into a food processor with brewed coffee and butter.

Try to smooth out your batter as thin as possible, this will make the baking time not so long.

After the first round of baking, cut into little squares and pop back into the oven to get crispy!

Keto Hazelnut Mocha Cereal

  • Servings: Four (1/2 cup)
  • Difficulty: kinda difficult for people without patience
  • Print

  • 1/2 cup golden flax seed meal
  • 1/4 cup hazelnut meal
  • 1/4 cup hulled hemp seeds
  • 1 tablespoon unsweetened cocoa powder
  • 3 packets Stevia in the Raw
  • 1 tablespoon ground cinnamon
  • 1/2 cup brewed coffee, cold
  • 1 tablespoon butter

  1. Preheat oven to 300F degrees.
  2. Combine all of the dry ingredients into a food processor. Pulse until incorporated.
  3. Add butter and coffee, blend until a doughy-batter forms (about 30 seconds).
  4. Spread onto a silpat or parchment-lined baking sheet. Try to get as thin as possible without having holes. (The longer the batter sets the firmer is gets, after a while I just pressed it out with my hands.)
  5. Bake for 15 minutes and then drop your temp to 250 and bake another 15 minutes.
  6. Remove pan from the oven and cut into bite-sized squares, a pizza cutter works best.
  7. Turn off oven. Put pan back in and let it sit for an hour to an hour and a half until crispy.
  8. Cool completely before eating.

  1. This looks great.. I’m not a fan of hazelnut.. do you have any suggestions for substitutes? This looks like a great idea for snacks.

  2. Thank you! I’m going to try this for my cereal-addicted son. I can’t stand coffee, so would I just use 1/2 cup of water instead?

  3. Can’t use nut flours because of kids with allergies, but would coconut flour sub for the hazelnut? Also, chia seeds in place of the hemp? (I have chia on hand at the moment). I’d love to give this a try for my GF teen who lives on carb loaded GF cereals half the time.

  4. Strong work on picking Keto! You’ll see some fast initial weight loss from water weight, it’ll level out, then you’ll start losing body fat when your metabolism switches onto full ketosis.

The cereal looks awesome, can’t wait to make it and enjoy with some whole or coconut milk

  5. Oh…cool. Thx for this. I’ll give it a whirl, sans the stevia in the raw. It is not a clean product.

  6. How do you spread it so thin? I tried with a rolling pin but it’s to sticky, and pressing it with my hands doesn’t really work

    • I used a butter knife at first and it got pretty thin like 1/6 of an inch. It took about 10 minutes to get to the point of me being able to press it down with my hands. But the thinner you get it the crunchier it will be!

  7. How much does this make? I have almond meal, shredded coconut and flaxmeal… Any suggestions on how to make cereal from this? I’m missing cereal so bad!! LOL

  8. Looks delicious!

If you want to give it an even stronger KICK (from the coffee), you might want to look into making Cold Brew Coffee, and adding that instead of regular brewed coffee that’s cold. Cold Brew Coffee is more concentrated, and thus the same amount of CBC will have more kick than regular coffee 😉 More bang for your buck, with how much coffee you’re adding. PLUS CBC is less acidic. Which is always good for the body 😉

There are recipes online, and it’s super duper easy to prep 🙂 Just make it overnight!

Looking forward to giving this a try! Yum!
